Community Servings Non Dairy Cauliflower Alfredo

This demo caught some attention at the Let’s Talk About Food Festival. Chef Kevin Conner of Community Servings does incredible work in the kitchen to accommodate the diets of the many people that they serve with chronic illness

Non Dairy Cauliflower Alfredo

Ingredients

1 Tablespoon Olive Oil

½ Diced White Onion

6 cloves Roasted Garlic

4 Cups Cauliflower Florets

1 Cup Vegetable Stock

1 Tablespoon Nutritional Yeast

½ Tablespoon Lemon Juice

2 teaspoons Kosher Salt

2 Cups Non Dairy Creamer (use in powder form and add 2 cups of water)

5-6 Salsify Roots

Heat the oil in a medium-sized pot over medium-high heat. Add the onion and let it cook for 3-4 minutes, or until it is soft and translucent. Add the roasted garlic and cook for 30 seconds. Add the cauliflower and the vegetable stock to the pot, cover with a lid, and let the cauliflower steam for 5 minutes, or until it is soft.

  1. Transfer the cauliflower to a blender (I use an immersion blender) and blend on high until smooth. Add the remaining ingredients (starting with 1 tablespoon of nutritional yeast, 1 cup non dairy creamer and 1 teaspoon of sea salt) and blend again. Taste and add more nutritional yeast, non dairy  creamer and sea salt, if you’d like.
  2. Either use the Dreamy Vegan Cauliflower Alfredo right away or pour it into a pan to keep warm until you are ready to use it.

Salsify Noodles salsify1

Simply peeled the stalk of Salsify to remove all the brown exterior layer and then use an mandolin to cut 1/8 in. thick strips that resemble fettuccine. Add the sliced Salsify to salted boiling water and cook for 7 minutes or until tender. When cooked, remove noodles from the water and reserved until tossing with vegetables and alfredo sauce.

Saute sliced garlic with olive oil for one minute at medium–high heat, add crushed red pepper, shredded kale cook for one minute. As kale starts to wilt, add some pasta water (1 cup) and Cauliflower Alfredo Sauce (2 cups) and simmer until kale is tender. If you’d like more sauce you can add more later. When kale is tender, add your Salsify Noodles, sundried tomatoes and chopped artichoke hearts and toss together (add more sauce at this time). Serve warm.
